1 cup cooked broccoli florets
1 large onion thinly sliced
½ lb. mushroom caps thinly sliced
½ tsp. salt
½ tsp. ground pepper
3 tasp butter
3 tabp grated parmesan cheese
2 tabp baking soda
Minced parsley for garnish
Place 2 tabp butter in skillet and saute’ onion and mushrooms until golden. Remove from heat.
Add eggs, baking soda, salt and pepper to a bowl and thoroughly beat.
Add the onions, mushrooms and broccoli and mix well.
Add rest of butter to skillet and pour in egg mixture. Make sure to cover bottom of skillet.
Fry on top of stove until eggs start setting. Sprinkle parmesan cheese on top and broil until golden.
Remove from heat and cut into wedges. Garnish with parsley.
